this cheeky cake tin was actually discovered by my brother online. we used it for a carrot cake recipe which worked perfectly! it can be trickly to divide into slices.

Red Velvet Cupcakes - Hummingbird Bakery

i thought i would start with the most successful of my culinary delights. the red velvet cupcakes. i have taken and adapted the recipe from the hummingbird bakery so if anyone would like the recipe, please email me.

my first batch weren't quite a success. a tip when mixing the frosting is to use full fat philadelphia cheese. the lower fat varities will result in runny frosting which will not co-operate when trying to decorate.

the next tip is to use dr oetker food colouring for the vibrant red colour. others will come out a muddy colour unless you use more than the reccommended amount!
