COCONUT CUPCAKES

i took this recipe from the hummingbird bakery. i decided not to flavour the frosting with coconut milk due to previous experiences with lemon cupcakes. however, this forfeited the strength of the flavour.


i used sugarflair colours colouring in pink for the frosting. i wanted to achieve a pale pink to avoid a colour clash with the cases, so i only applied two drops. however, they're quite a bit darker than expected.

the foil cases and sugar flowers are from cornelli in wendover and desiccated coconut was sprinkled to decorate.
