CHEESECAKE

when it comes to cheesecake, my preference lies with baking the mixture. it's a fairly simple method but it can not be rushed. if the oven is too high, the outer surface will burn but centre will remain runny.

for an even cake, a lower heat and longer cooking time is essential. however, when using the below recipe, i turn the heat up by a gas mark or so.
i also opt for toying with the biscuit base. instead of committing to digestive biscuits, i substitute half of the required amount with ginger nuts.
