good news bakers, we've just had some info come our way about gluten free cupcakes from our favourites - the hummingbird bakery. so if you're a sufferer of gluten allergies, or just trying to cut back on all of the wheat you're eating (let's face it - christmas was a slippery slope into all too frequent comfort eating sessions!), then these are for you!

"We'll be selling some gluten-free products from the 24th of January.

Available to buy in-store: Red Velvet and Vanilla Colours.
Available to pre-order online: Red Velvet, Vanilla, Chocolate and Carrot.

We'll also be selling whole cakes to be pre-ordered from 8-inches upwards in Red Velvet, Vanilla, Chocolate and Carrot!"

i'm even thinking of trying out a couple of new recipes myself, sugar free and the use of almond flour (inception planted by nigella) as an experiment. i'll let you know how this goes!

remember the make-shift red velvet whoopie pies i crafted just before christmas (refresher: christmas for atlantic)? well, now you can craft them too with a book based solely around the cupcake's competitor.

'whoopie pies' by sarah billingsley and amy treadwell is jam packed full of recipes (40 to be exact) and will also guide you in actually baking these delightful treats. flavours include classics such as chocolate and marshmallow and range to something more peculiar flavours like green tea and oatmeal with a maple-bacon buttercream...? probably a flavour that will take some further investigation before i determine that one's fate...

currently in the sale for just over £7 (here), it's worth giving the whoopie pie a try this new year!

i've decided to start practicing frosting cupcakes with the use of icing bags. i'd see a video tutorial of how to create a rose like creation using a 'rose tip'. i found a video tutorial on youtube (below) which, after all of the faffing in the first half, is really helpful.

however, i think next time i'll need to purchase the piping nozzle specified and mine (tip number 61 by tala) was not flat edged and was more curved if anything. i may have also cheated slightly (definitely not a good idea) and bought my icing prepared (never again). while betty crocker's buttercream frosting in vanilla can come in handy when time isn't on your side, i wouldn't recommend it. the frosting melts far too quickly making it difficult to ice with a piping bag (it helps to make sure the frosting is chilled before crafting your masterpiece as it molds more to the required shape).



not quite (at all) the look i was going for but it's nothing a few sprinkles can't fix!



christmas is over (a tear) and what a better way to start the new year with something familiar? winkwell's favourites, hummingbird bakery, have introduced their new special range, 'old favourites' which go on sale tomorrow (4th January)

the flavours include blueberry, nutella, strawberry cheesecake, lemon curd, peanut butter brownie, spiced pumpkin and chocolate malt.

i think i my favourites are going to be:

Strawberry Cheesecake (Sunday): Vanilla sponge with strawberries topped with cream cheese frosting and crushed digestive biscuits. I've come across a couple of cheesecake recipes to be used for cupcakes so may tackle this soon!

Lemon Curd (Wednesday): Lemon and vanilla sponge with a tangy lemon curd centre and zesty lemon frosting.
